One of the favorites at my last “Chew & Chat” party was this yummy black bean dip brought by my yogini friend Wendy. If you’d like to be invited to one of our get togethers where 1. Recipe for Black Bean Dip:

1 Can Black Beans, drained and rinsed

1 Can Shoe Peg Corn, drained

1 6 oz pkg crumbled Feta Cheese

4 Scallions, chopped


1/3 cup balsamic vinegar (or white balsamic vinegar)

1/3 cup olive oil, (or a little less)

2-3 Tbsp. sugar


Combine scallions with beans, corn, and feta. Whisk together vinegar, olive oil and sugar. Pour over ingredients and toss. Chill. Serve with tortilla chips.
